Brunsviger is a traditional Danish cake with a soft yeast dough base and a generous topping of butter and brown sugar. The topping melts into the dough during baking, leaving a sweet, sticky surface. It’s particularly associated with Funen, the island where Odense is located, and is a much-loved part of the island’s food culture.
The cake has a long history in Odense: a baker on Nedergade advertised brunsviger as early as 1830. Try a classic slice at Baker Boys, or visit BRØD Danish Bread Studio for a brunsviger swirl, which gives the local favourite a different shape.
